Southwest black bean burger bowls

Here's everything you love about a burrito made into an easy-to-assemble bowl that uses frozen foods for two of its main ingredients.

  1. Grease a large skillet with cooking spray and turn to medium heat. Cook frozen black bean patties for 5 to 6 minutes per side, until lightly browned. Slice each patty into quarters.
  2. Meanwhile, place corn in a microwave-safe bowl. Cover with a damp paper towel and cook for 3 to 4 minutes, until hot, stopping to stir once.
  3. Divide rice evenly into 4 bowls. Top with one quartered black bean patty, 1/4 cup corn, and 1/2 cup halved cherry tomatoes.
  4. Combine sour cream and lime juice in a bowl; whisk until smooth. Drizzle mixture evenly over bowls.
